Three ancient grains to try

If you are bored with dinner, here are three ancient grains that you might want to try that can add a healthy dose of plant-based protein, according to Health.com.

* Teff: A staple in Ethiopian cuisine, this cereal grain has a fine texture and low glycemic index value, which makes it less likely to cause blood sugar spikes. It is also gluten free. Look for recipes for injera, a spongy flatbread. See teffco.com.

* Kamut: Also known as khorasan wheat, kamut is high in protein and always grown organically — never genetically modified. This dense grain is perfect for soups and stews.

* Amaranth: Naturally gluten free, this is technically a seed and is a perfect swap for oats. It is especially rich in antioxidants, B vitamins and minerals. This fiber-rich grain is often used instead of wheat in Asia.
