The story of Cesare’s salad
The modern Caesar salad probably doesn’t come from Rome, but according to popular legend, it does come from Tijuana, Mexico. The Caesar salad was invented in 1924 when Cesare Cardini, an Italian restaurateur, moved to Mexico to escape Prohibition. One July 4th, his restaurant was doing such brisk business that he found himself short on ingredients. So he improvised with some romaine lettuce, raw egg yolk, Parmesan cheese, anchovy paste, and other odds and ends. The Caesar was an instant hit, and Cardini's restaurant, Caesar's Restaurante-Bar, is still in business today.
