Five eggs
2 tablespoons milk or heavy cream
1/3 cup finely shredded cheese
Salt and pepper to taste
About a cup of finely sliced or shredded vegetables, such as spinach, bell pepper, carrot or whatever you prefer
Preheat oven to 350 degrees Fahrenheit. Crack eggs into a bowl. Add milk and beat with a fork until blended. Add the rest of your ingredients and mix well. You can mix and match whatever veggies and seasonings you like — mushroom and arugula with shredded swiss, bell pepper with shredded jack cheese and taco seasoning — whatever flavor profile you want, these egg bites will accommodate. Pour egg mix into a well-greased mini muffin tin and bake for about 20 minutes. Let rest for two or three minutes before removing from pan. Serve warm.
