Meal kit companies cut into the kitchen

Gourmet meals by mail — this is a concept so large that it has attracted more than 100 companies.

Several stars have emerged, however. Blue Apron, The Purple Carrot (vegan), and PeachDish (Southern cooking) are just a three of the companies that have flourished.

According to Forbes, working couples and busy families have plenty of money, but they are low on time and cooking skills. That's the niche of meals by mail and it's a big one. Blue Apron brought in almost $1 billion in revenue last year which was double their own forecasts. They may also be considering an IPO which would value the company at around $3 billion dollars, according to Fortune.

Although convenient, CNBC points out the meals are expensive. Meal kit services charge around $60 to $75 a week for three meals for two people while the average cost of a typical meal cooked at home is $4 per person. But meals by mail also deliver special interest foods, such as vegan or organic.
